Nmap uses raw IP packages in novel ways to find out which serves are available on the system, what services (application name and version) those serves are providing, what operating-system (and OS versions) they are operating, what type of bundle filters/firewalls are in use, and a multitude of other features. It was designed to quickly check out large systems, but works excellent against single serves.
